
I’ve lived around pine trees for over half my life and have never heard of this. However I found a [website](https://commonsensehome.com/pinecone-jam/#Is_It_Safe_for_Canning) that says it might not be safe for water bath canning unless you can test the acidity level, does that mean you might be able to pressure can it?
UGH I want to try it so bad but don’t live near pine trees anymore…. HAHA

I do live near pine trees, but this doesn’t sound appealing to me. Ever tasted pine pitch? That’s all I can imagine it being like, is sweetened pine pitch. But anyways, if you do get your hands on a bunch of baby pine cones, why not just make a little batch to taste it? 2 or 3 jars could be gifted as refrigerator jam, even though it isn’t shelf stable.
Canning requires more than just ph. The density and heat penetration are also important. Unless you find a safe tested recipe like from the nchfp or an extension office, it would unsafe to can this. You don’t know how long or at what temperature it would require to be safe.
