
Basically I want to grow my skills of cooking where I no longer need to recipes unless I want inspiration; but I don’t know how to get there.
Say I follow this recipe: https://rainbowplantlife.com/eggy-tofu-scramble/
I have made it several times, but I always forget the seasonings and how much is needed so I need to look up the recipe. So any tips to:
– remember recipes better
– not _need_ recipes at all other than for inspiration
If there are any guides on how to be a better cook, I am interested!

I follow recipes that are new to me until I get the swing of things. If it’s similar to another recipe I make, then usually I need it once. If it’s something totally news, then a few times or more if I feel like I’m not quite gerund m getting things right.
For seasonings, I stopped measuring a long time ago. I know much if any given herb or spice I like.
The key is just cooking a lot. You’ll get the hang of it but it takes time. Also master or get comfortable with basics of cooking. Prepping, sautéing, stir frying, baking, clean-as-you-go, broths, sauces, rice, etc. if you have specific questions please ask!
#1 for me: consistency and uniformity- learn to cube, dice, mince, slice, and process foods consistently and uniformly. Your recipes will turn out better and they will be consistently better. If you’re cubing your vegetables irregularly, some will be overcooked and others will be undercooked. If you’re over-mincing your garlic or improperly processing your onion, your dish will be unbalanced.
