Hope I’m not asking the impossible becuase I’m dying to make these overnight oats but they have greek yog in. Does anyone have a recipe that’s ideally low cal/high protein? A tofu version would be ideal!

I’m sure you can Google the amounts online, but I use a couple of boxes of WestSoy soymilk (any brand that’s just soybeans and water is fine – this is the most common brand where I live) and 1/4 cup of starter (yogurt I already have) in the instant pot on yogurt setting.
That makes your yogurt.
After that you can make it into Greek yogurt by straining it. Line a sieve or funnel with cheesecloth or a coffee filter and set it over a bowl to drain. Timing depends on how thick you want it.
This is an inexpensive and easy way to make yogurt that’s vegan, high protein, has good cultures, and delicious. And it makes a LOT.
Of note: You want a soy milk that’s just soy beans and water because any additives or thickeners can make it set up funny or not set up at all. If you can’t find one in your area that has just the two ingredients, you can always try it with whatever brand of soy milk brand you usually use. It’s definitely worth trying.
And for the starter, they sell commercial yogurt, starters that you can use, some people use a couple capsules of probiotics that you’re supposed to take for digestion, or you can use whatever kind of yogurt you like. Just make sure that it’s a yogurt that was actually cultured as opposed to just thickened. Check the label and make sure that it has live and active cultures.
