True. You don’t make friends with any shrimp under 20 count per pound. And That is the boss way on the angled ends.
I do the U-12 (12 per lb) with shredded coconut and cream cheese. Basically a small lobster tail. Wrapped in bacon. Nicely done sir
I put mine first in the oven under the broiler to get that bacon on its way to rendered THEN move out to the pit with it for smoke. The bacon is always rendered out like you want it.
Nothing like taking some jumbo St. Augustine shrimp fresh off the boat, lightly battered and fried a golden brown! Yummy!

I like boiled shrimp, but sometimes when you pop the top on one of those shrimp platters from the Walmart, those things smell very conspicuously fishy. So I tried something years ago with one of those platters. I took that platter, dumped it into my boiling pot with a basket inside, and brought my water to a boil for about two minutes, took those shrimp out, and threw them into some ice. Guess what? No more fishy or smelly shrimp, and (yes they are a little firmer that before), and they have the consistency of about a good medium rare steak. Without the fishy smell or taste, shrimp go a lot better with that cocktail sauce.
