    Serves 2

    Ingredients:

    – ½ cauliflower head diced
    – 1.5 cup chickpeas
    – 1 tsp turmeric
    – 1 tsp smoked paprika
    – 1 tsp garlic powder
    – Dash of salt
    – 1 tbsp olive oil
    – 2 tbsp toasted almond
    – 1/2 avocado diced
    – 1 small cucumber diced
    – 3 cups arugula
    – ¼ cup pickled onions

    Avocado dressing:

    – 1/2 avocado
    – ½ cup parsley
    – ½ cup soy milk
    – 1 tbsp roasted jalapenos
    – 1/3 cup lemon juice
    – Dash of salt

    Instructions:

    1. Preheat the oven to 390F (200C).
    2. To a bowl, add the cauliflower, chickpeas, olive oil, turmeric, smoked paprika, garlic powder and a dash of salt. Mix until thoroughly coated. Transfer to an oven-safe dish. Cook for 30 minutes.
    3. To a blender, add the avocado dressing ingredients and process until smooth.
    4. To a bowl, add the arugula, roasted cauliflower, pickled onions, chickpeas, cucumber, almond and avocado. Drizzle with the avocado dressing, and enjoy!
