Ingredients
1 (500g) sheet puff pastry
For the Filling:

2 small zucchinis. sliced 1/4-inch thick rounds
olive oil
salt, to taste
1 garlic clove, grated
1 teaspoon dried crushed oregano
freshly cracked black pepper, to taste
8 oz (230g) cream cheese, softened
2 oz (60g) grated Parmesan cheese
4 oz (115g) feta cheese
Egg wash: 1 egg yolk plus 2 tablespoons milk
Instructions
Preheat the oven to 400 °F, 200 °C.
Dust some flour onto a work surface and roll the puff pastry out to 16-inches in diameter. It doesn’t have to be round. (see video)
Place the pastry onto a baking tray lined with parchment paper.
Pierce it with a fork.
Spread the cream cheese onto the pastry leaving a 2-inch border.
Top with parmesan.
Crumble the feta cheese on top.
Place the zucchini slices into a large bowl. Drizzle with olive oil, season with salt, pepper, oregano, and add the garlic. Toss together to coat.
Arrange the zucchini slices on top of the cheese in circular patterns. (see video)
Drizzle any leftover herb oil over the tart.
Combine the yolk with the milk and mix together.
Fold the edges of the puff pastry over to form a rustic border.
Brush the puff pastry border with the egg wash.
Bake on the center rack for 45-55 minutes.
Allow the pastry to settle at room temperature for 15 minutes and serve. Kali Orexi!

  1. Where do I buy puff pastry. I have looked at Costco Albertsons Smith’s Food King and Azure. Can’t find it anywhere I haven’t checked Whole Food there a joke

    I have a red onion to use up, so going to mandolin some super thin slices to assemble in the middle. I may also throw in a pinch of sumac.

  5. No pastry dough in my area. Used phyllo dough. Not at all happy with results and flavor wasn't as yummy as I thought it would be. I used both good quality oregano & good quality dill from local middle eastern market.
