You definitely won’t have any leftovers when you make these zucchini fritters. This is my go-to recipe whenever I have an abundance of zucchini, especially when they’re in season and growing like weeds! You only need one pound of zucchini for this easy fritter recipe, but you can double or even triple the recipe.

  1. I am heading to Aldi's for my zucchini. I have to buy a cheese cloth too! That looks so good! Is that a lite sour cream?😋😋😋😋

  2. Can't wait to try this! Dumb question, but wouldn't adding salt to the shredded zucchini help with getting the water out as opposed to salting it later?

  3. Hi Colt. I just found you today. Thanks for this recipe — and the tips along the way. Your clever narrating was much enjoyed. And I know this video is from a year ago — and I'm probably the thousandth person to say this — but your whisking skills are incredible!!!!! Nice work! I wanted to save your recipe to my "Recipes" library — but I couldn't find the link. I'll just search "Zucchini Fritters" the next time I plan to make some.

  4. I notice that everbody in the cook videos uses a bowl and a whisk, I find the easiest way is to put the eggs in a tea/coffee cup and use a fork to mix the eggs

  5. Thanks for speeding it up. And frankly who cares how one beats up an egg…as long as it is beaten.

  6. These zucchini fritters are the best I make them all the time. The only thing I do different is put some baking powder in and make them rise higher

  7. Can you substitute extra parm cheese and omit the flour to make them low carb and GF?
