Sauteed Shredded Brussels Sprouts

Yield: 4 to 6 servings
Ingredients
2 (12-ounce) packages fresh Brussels sprouts, trimmed
2 tablespoons unsalted butter
2 tablespoons good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon syrupy balsamic vinegar
Directions
Place the Brussels sprouts in the feed tube of the food processor fitted with a large slicing disk. (You don’t need to core them.) Process until they’re all sliced.
Heat the butter and olive oil in a very large (12- to 14-inch) sauté pan over medium to medium-high heat. Add the Brussels sprouts, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper and saute, stirring occasionally, for 5 to 7 minutes, until crisp-tender and still bright green. Off the heat, stir in the balsamic vinegar, season to taste, and serve hot.

Those look like mini-cabbages. They must be extremely expensive.
I once had Thanksgiving dinner guests tell me they did not like brussel sprouts. I shredded the sprouts, sauteed them in bacon fat, added salt and pepper and some apple juice, and put the crumbled bacon on top. I told them it was cabbage. They all had second helpings.

I am with you on boiling or steaming! Yuck, After eating them roasted and sautéed on the stove. I feel the same about cabbage. It has to be fried. I won't eat them any other way. Except your way now. Thanks for the tutorial. I have to find my disc for my food processor.

I like using Adobo Seasoning with pepper on my roasted Brussels Sprouts. I use olive oil and butter along with that seasoning and it is so good! The Balsamic Vinegar is amazing with them as well! I love you, Ina!!! I love your videos! I have all of your cookbooks! All of them…
