Cauliflower Mash Recipe

This is a super easy recipe that is healthy, low carb (compared to mashed potatoes) and full of vitamins and fiber. It can also be gluten free if you make sure all the cheese ingredients do not contain gluten.

This is a great alternative for a side dish for Thanksgiving, Christmas or anytime. You can put this dish together in a matter of minutes which is perfect for a quick weeknight healthy dinner.

Ingredients:

1 head cauliflower
1/4 cup Greek yogurt
2 Tbsp. goat cheese
1/2 tsp. fresh rosemary, minced
1/2 tsp. garlic powder
1 Tbsp. butter, melted
salt
pepper
chopped fresh parsley (optional)

Directions:

First cut the cauliflower into florets, rinse and place in a steamer. Steam for 15 to 20 minutes or until the cauliflower is soft. Remove from heat and drain excess water.

Melt the butter and then combine the cooked cauliflower and all of the ingredients in a mixing bowl.

You can use a stick blender (immersion blender), hand mixer, food processor or even a hand masher to combine all of the ingredients to the consistency of mashed potatoes.

You can garnish the cauliflower mash with chopped fresh parsley if you wish.

It’s delicious!

  1. I must admit I prefer the cauliflower just as it comes. I find that blending or making rice cauliflower for some reason gives the cauliflower a bitter taste,a kind of stronger taste.

    It IS a regular carb. It is a healthy complex carbohydrate. Potatoes aren't bad they are just starchier than cauliflower. You're getting a vegetable with potatoes too, they just should be eaten sparingly. I loved them too much and made mashed potatoes at least 3 times a week. Loved the food I ate in my life though. I just wish I hadn't lived in mold because it altered my body's food tolerance too.
