I am trying out 2 dinners in one pot. One side is chicken for chicken-n-dumplings or pot pies and the other is Mississippi pot roast. The pot roast is usually butter, ranch powder and pepperoncini vinegar but i was out of jarred peppers so I improvised with a little jalapeño hot sauce and green salsa. I will do the veggies separate.

My goal is to make enough to freeze ready made meals for the busy holiday season. Especially the chicken, all I have to do is pull out the frozen Tupperware and bake it like a Marie Caleders freezer meal, but with quality meat and extra veggies.
