INGREDIENTS IN THIS DISH:

10 Small Cup Mushrooms (stalks removed)
100g Ricotta Cheese
100g Semi Sun-dried Tomatoes (chopped)
2 Tablespoons of Fresh Basil (chopped)
1/4 Cup of Grated Cheddar Cheese
Salt and Pepper
Olive Oil

Preparation Time: About 10 minutes
Cooking Time: About 20 minutes

MAKES 10 STUFFED MUSHROOMS

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

  1. When you said "feta" I was totally inspired to try a spanakopita filling which I sometimes make.
    It worked out really well. I used the ricotta and added spinach, feta cheese, onion, thyme, egg, salt and pepper .
    It worked out surprisingly well.
    Thanks for the inspiration .

  2. Better oil up in the outside or you're going to get white wrinkled mushrooms not a nice Brown juicy mushroom.

  3. Ricotta is a sweet cheese it's not salty. You don't taste salt in ricotta it may be there but you can't taste it.
