It might not seem banana bread — a recipe made maybe BILLIONS of times — leaves a lot of room for innovation, but this version from Dessert Person is subtly different than your typical loaf. The almond butter swirl on top and almond butter in the batter adds a savory edge and toasty flavor, while coconut oil and yogurt keeps it tender and moist. Claire demos the very easy, quick recipe that requires little more forethought than forgetting some bananas on your counter until they turn brown.

Banana Bread
Special Equipment:
4 1/2 x 8 1/2-inch loaf pan, measured from the top
Ingredients:
Coconut oil for the pan
3 tablespoons plus 1/3 cup almond butter (4.6 oz / 130g)
1 tablespoon plus 2/3 cup sugar (5 oz / 143g)
1 teaspoon plus 1/2 cup virgin coconut oil (4 oz / 115g), gently warmed to liquefy
1 1/3 cups all-purpose flour (6.1 oz / 173g)
1 teaspoon baking powder (0.14 oz / 4g)
1 teaspoon Diamond Crystal kosher salt (0.11 oz / 3g)
1/2 teaspoon baking soda
1/4 teaspoon ground cardamom
2 large eggs (3.5 oz / 100g), cold from the refrigerator
1 cup mashed banana (8 oz / 227g), from about 2 very ripe large bananas
1/3 cup plain whole milk Greek yogurt (2.8 oz / 80g)
1 teaspoon vanilla extract
1/2 cup unsalted roasted almonds (optional), coarsely chopped (2.1oz / 60g)

Is it a sin if I replace the almond butter with Nutella? 😅
I made this as a dozen muffins and it turned out great! Preheated the oven to 425 and popped them in for five minutes before reducing the heat to 350 for another 18-20 mins.
Made this and it's sooo good, even though I forgot to add the yoghurt lol. Easily my go-to banana bread recipe from now on, not too sweet as Claire says, which makes it perfect to enjoy any time of the day.
Can you use regular peanut butter?
I baked this for my wife and it ended up perfect. Just like hers.
I melted half a stick of butter till it browned and used that instead of almond butter and coconut oil tasted great

i just made two banana bread by doubling the recipe. it was so yum though my almond butter is not enough for both batter but still amazingly yummy. Not overly sweet and you can really taste banana in the background. The sweet salty crunchy almond butter swirl on top makes the banana bread a stand out. Delicious! Thanks for the amazing recipe.
Hi Claire, I don't have coconut oil on hand. Is it possible to use unsalted butter or some other form of oil?

Mine just finally cooled down enough for me to get a slice. First of all, it's soooo pretty! This would look lovely on a Thanksgiving dessert table or for the morning after. Second, girl! This is sooo delicious! Hand's down, the best thing I've ever baked. I'm not the best in the kitchen but your instructions where so easy to follow. Thank you so much for sharing this recipe. Only thing I did different was to add a little sprinkle of turbinado sugar on top. Everyone, please give this a try! 😋

Ive made this banana bread nonstop since 2022 and i always make it with wholewheat flour and i kid u not it keeps getting better each time i make it ive made it with peanut putter almond butter hazelnut butter and they r all amazing but my fav is the peanut cus its perfect for the salty nut butter goal and peanut butter is my fav thing ever, ur entire channel is amazing me and my sister obsess over every recipe and ur my go to youtube channel for whenever i feel like baking something and knowing ill love it 💕.

Hi, a lot of recipes I know uses canola oil or any neutral cooking oil. But in this recipe coconut oil was used, I was just wondering if it affects the flavor of the banana bread or is there a purpose for using it?
I was looking for a banana bread recipe and noticed how your video thumbnail made it look like you were touching a huge slice of banana bread. That made me smile and decided to click on it. I'm not disappointed. This is great.

I got my book out and finally made this version. IT"S SOO GOOOOOOD!!!
My banana nut bread came out the best I've ever had and that means from anyone. I did doctor it a bit, I added heavy cream, toasted coconut yogurt and …………. sorghum, about a 1/2 cup. I quadrupled the recipe part so don't use a 1/2 cup if you try using her recipe at her proportions she lists. This is so good, I'm making more, even though I came out with 5 regular size loaves and 3 small loaves.
