It’s old hat for most of you guys but it’s still exciting to me when I hear all six jars POP! Make 6qts chicken stock in my 10qt Instant Pot.. doing beef stock tomorrow. Used 2 rotisserie carcasses, onion, celery, carrot, parsley, black pepper corns, salt, poultry seasoning, white pepper. Strained twice (fine mesh collander 1x, then tea towel the second time. Really good flavor. Will use for various soups. Used a 1994 Mirro 7qt canner. Replaced all the gaskets and relieve valve last year… So good until 2050 now! I hope I last that long.

    Good on you, and I agree! 3 days ago I canned 13 quarts and 8 pints of mixed stock and I feel so happy! Sadly, 2 of the pints lost their seal by the next day.

    I just canned another 6 jars last night. I never grow old of hearing the sound of popping lids.
