Simple ingredients and a dressing shortcut make this my all time favorite Pasta Salad, a side dish that is more than hearty enough to be a meal and perfect for those summer gatherings.

Pasta Salad Ingredients

2 lbs Corkscrew Pasta Cooked And Chilled
1 ¼ lbs Italian Dry Salami
1 ¼ lbs Provolone Cheese
6 oz Whole Pitted Black Olives
12 oz Pepperoncinis
5 oz Shredded Parmesan Cheese
20 oz Marinated Artichoke Hearts (In Oil)
10 oz Grape Tomatoes
Reserved Oil From Artichoke Heart Marinade

  2. That salad looks delicious ! I was looking for a recipe to take to work, don`t think I want to spend that much money on them. LOL

  3. First, get a big bowl. Then get a bigger bowl. Just kidding. You made a lovely thing there. You could substitute a nice Italian dressing for the artichoke olive oil. That’s not a side, that’s a meal. My US Navy cook BF made a lighter pasta salad with raw yellow squash, zucchini and other veg, cheddar cheese, but no meat and a red wine vinegar dressing. Yummy

  4. I generally take the artichoke marinade and whisk it together with the juice and zest of one lemon to give it a very bright flavor. but I do like your recipe chef.

  5. I use an Italian Dressing (store bought or make your own; it's easy) then combine 3 parts dressing with 1 part Basil Pesto. Great dressing for a cold Pasta Salad.
