I made this for the second time today (having gained an hour with the time change, I put it to good use).
It was great and I’d do it again. There are just two issues:
1. Mine are not round. The batter is a little too thick for it for it to spread out in the pan.
2. My teflon spatulas will not go all the way under them to flip them, so flipping can make a mess.
I think just adding more milk or buttermilk to thin it would fix #1. For #2, maybe a metal spatula? Although I don’t want to scratch my non-stick pan.

I typically thin it with more buttermilk to get a consistency I like. Maybe because of the thinner consistency, I have not had the issue with the spatula. I think they are great! The lemon ricotta ones are even better.
Consider cooking pancakes in cast iron. That’s how I typically do it. I have a large metal spatula that is perfect for pancakes. They always turn out great!
