Harira (Arabic: الحريرة al-ḥarīra, is a famous traditional Moroccan soup. It is popular as a starter but is also eaten on its own as a light snack. There are many variations and it is mostly served during Ramadan, although it can be made throughout the year.
Ingredients :
Meat (beef or lamb) – 500 gramm
Onion – 1 piece
Celery stick – 2 pieces
Parsley and coriander – half banch each
Tomatoes – 4 pieces
Tomato paste – 1 table spoon
Chick peas – 450 gramm
Green lentils – 150 gramm
Vermicelli – 100 gramm
Egg – 1
Corn starch or wheat flour – 3 table spoon
Olive oil – 3 table spoon
Spices :
Ginger powder – 1 tea spoon
Cinnamon powder – 1 tea spoon
Turmeric powder – 1 full tea spoon
Black pepper – 1 tea spoon
Paprika powder – 2 tea spoon
Cumin seeds – 1 tea spoon
Saffron – 1/2 tea spoon
Salt to taste
