Baked Stuffed Shrimp

20 Large shrimp (U 4-6) size

4 sleeves of townhouse butter crisp crackers (1 Box) Coarsely chopped

1 lemon juiced

1 lb good lump crabmeat

¼ c good sherry

2 sticks melted butter

Fresh chopped parsley (1/4 cup)

Sprinkle lightly with Paprika at end

An additional 1 stick butter (1pat on each shrimp)

Clean and devein shrimp

Peel off legs but leave back shell intact

Coarsely chop crackers in food processor or with hands, place in large bowl

Add lemon juice, crabmeat, melted butter, passkey and sherry

Use hands to incorporate all the ingredients and make into a firm texture

Stuff each shrimp with a small heaping of stuffing

Top each shrimp with 1 pat of butter with toothpick

Sprinkle with parsley & paprika

Bake 400 – 20 minutes -do not overcook! Bon Appetit !
