Ingredients

* 3 tbsp soy sauce
✷ 2 tbsp rice wine vinegar
✷ 2 large garlic cloves, crushed
✷ 2cm knob of ginger, peeled and
grated
✷ 2 tbsp brown sugar
✷ 500g salmon fillet, cut into strips
✷ 500g tuna fillet, cut into strips
✷ 1 red pepper, sliced into strips
✷ 8 spring onions, cut into 5cm
lengths

Step by step

1 Make the marinade: in a bowl, mix together
the soy sauce, rice wine vinegar, garlic
cloves, ginger and brown sugar. Rub the
marinade all over the salmon and tuna and
chill for 20 minutes.
2 Soak some wooden skewers in water, then
thread a piece of red pepper between two,
like rungs on a ladder. Then thread a piece
of salmon, spring onion, tuna and back to
pepper. Repeat, pressing together well.
Brush with any remaining marinade.
3 Barbecue for 5 minutes each side until
the fish is cooked through and flakes easily
with a fork, and the vegetables start to
caramelise.
