Made this corn chowder and it turned out a lot better than I thought it would.
4 cobs worth of corn, cut/removed from the cob
2 large baking potatoes – chopped
2 large or 3/4 small/medium carrots – chopped
1 large onion – chopped
1 carton of chicken stock
1 lb of cooked bacon – roughly chopped
2x 16 oz cans of creamed corn (I used a sweet creamed corn)
1 16 oz can of evaporated milk
Heavy cream (I didn’t measure this part, just winged it. Was at least a few good glugs, though.)
1 stick of butter
1/2 cup of flour
Rando seasonings – I used some Italian seasoning, garlic powder, salt, pepper, Bearded Butchers chipotle, and some cayenne powder.
Mix everything except for the evaporated milk, heavy cream, butter, and flour in the crockpot. Put it on LOW for about 6-7 hours.
After 6-7 hours on LOW, add the evaporated milk, stick of butter, heavy cream, and sift in the flour. Mix well and set it on high for another hour or two.
Serve either in a bowl or a taco shell if that’s your thing.
Edit: Some green would have been nice in there. Next time I make this I’m gonna throw some spinach in when I add the cream, butter, etc…
