A quick, simple, and healthy bite-size appetizer all will enjoy – especially great for the holidays!
Ingredients:
8oz fresh cherry size mozzarella balls
3oz prosciutto
1 cup of cherry tomatoes
10-15 fresh basil leaves
3 tbsp balsamic vinegar
1 tbsp olive oil
Salt & pepper
Handful of spinach
Toothpicks
Instructions:
1. Slice cherry tomatoes in half.
2. Tear the prosciutto pieces into fourths and fold into little squares. Press each one after folding so they stick together.
3. Wash the basil leaves and tear into medium pieces.
4. Arrange an assembly line by placing each ingredient in a different bowl.
5. On a serving platter, create a bed of spinach.
6. Start assembling the appetizers by using toothpicks to skewer one mozzarella ball, prosciutto square, basil leaf, and tomato half at a time. Arrange the mini skewers on the bed of spinach as you make them.
7. Whisk vinegar, olive oil, salt and pepper together, drizzle on top, and serve.
