Makes 6-8 servings:
1 medium onion, quartered
1 pound ground lamb
1 pound ground beef
4-5 garlic cloves
2 teaspoons salt
1 teaspoon dried oregano
1 teaspoon cumin powder
½ teaspoon ground black pepper
Equipment: 9 x 5 inch loaf pan
For the Sandwiches:
Pita bread
Onion slices
Tomato slices
Tzaztiki Sauce
Lettuce
Crumbled feta cheese
Preheat oven to 325 degrees Fahrenheit, 163 degrees Celsius.
Place the garlic cloves in a food processor and pulse until very finely chopped.
Add onion and puree until smooth.
Add ground beef with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses.
Place the mixture in a loaf pan. Compact it as much as possible.
Bake for 45 minutes till 1 hour.
Allow the pan to cool at room temperature completely. Refrigerate at least 2 hours before removing from the pan.
Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly. Pour all of the pan juices over the slices along with any of the fat that has gelatinized. It adds so much flavor when heating it up for the sandwiches.
At this point the gyro slices can be placed in a freezer safe bag and frozen for future use.
To make the Gyro sandwiches, place a cast iron pan over medium heat and cook the gyro slices until they are browned on both sides.
Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce with crumbled feta. Serve immediately. Enjoy!

Ground meat?, NO WAY!!!.
I rosat whole leg of lamd or whole posrk shoulder or ehole chicken or whole beef roast. Any of thesr on my weber kettle. Then i enjoy a roast, I slice up the left over meat and season mostly Oregano, Rosmary and thyme with paprika and garlic.
Thr most dominant smrll and tastr has to be the Oregano for sure.
Leave that ground meat stuff for the Turkish people. Thats true to their culture.
I thought gyros were pork
This being Greek American gyro, which is what I've been craving versus the traditional whole meat shaved off the spit style, is EXACTLY what I've been looking for . Thanks, can't wait to try

can you imagine how drastically different the ingredient list must be on the processed gyro meat they serve at most restaurants? talk about mystery meat. i would take this homemade version over that stuff any day, but i do think it would be even better if you finished the slices over charcoal

Just what I wanted for a nice summer prep idea. Just got a.vacuum sealer to process garden veggies and will definitely use it to put ahead some gyro meat sandwich slices. I use ground venison and lamb since husband and son filled the freezer with last years hunt. Also can use up some of the extra garden cucumbers for the sauce. Thanks again. do you use grease to cooky gyros
I have no doubt that meat product tastes delicious but gyro meat should never be made with ground meat. I've eaten gyros all over Greece never had one with ground meat, they were all made with thinly sliced pork neck meat but I can't find them like that here in the States they're all with ground. Poopoo. I mean, at the end of the day you can put whatever you want in there but you just can't beat the stacked marinated thinly sliced meat cooked on a vertical over a bed of charcoals…. All the juice and the charred bits….
