

I’ve been delving a bit into some Japanese flavors lately. One of the things I’ve been really enjoying is shiozake. Sake and salt cured salmon then broiled or roasted.
So a natural progression for me is, will it sandwich. By golly it does.
2 slices of shiozake, wakame salad (Wakame, arugula, scallions, cabbage, ponzu, sesame oil, sesame seeds, splash of rice vinegar), mala mayo (kewpie, housemade Szechuan chili oil, shoyu, chinking vinegar) on buttered and griddled ciabatta.
I’d try shokupan if I had it.
Garnish is housemade bread and butter pickles and pickled daikon.

I do a similar salmon with shio koji…delectable.
