  3. Usually the meat used is the leanest part of the upper leg of the ship or cow. it should be ground twice or three times to make it as fine as possible. If you have a Middle Eastern grocery store or butcher in your area they might have it already ready for you to buy. It sells for about $5 a pound in my area.   4. Hi there.. I freeze the kofta balls all the time. There are two ways to freeze. You can freeze the kofta balls one layer at a time, After they are frozen solid, then you can put them together and store the container(zip log will do) in the freezer. The second method is to boil the Koftas let them cool down on a kitchen towel to absorb as much liquid as possible then freeze in one layer and when frozen collect them in one container and store in the freezer.
