My partner and I visited Rome a week ago and can’t stop thinking about this pasta dish we had since. It was at a restaurant called Capo de Fero Roma and the dish was called Rigatoni Democratici.
We really want to try recreating it at home but l’ve googled it and I think that name is unique to the restaurant.
It was rigatoni with a creamy sauce (could be wrong but tasted like it had a hint of blue cheese in it) and crumbed sausage on top.
Any ideas?

Make a bechamel, melt the kinda of cheeses you want into it
Add almost al dente pasta, finish in pan
Add breadcrumbs
The description on the menu says cream Parmesan and sausage.
Probably roasted/fried salsiccia on top?

Judging by the looks, they probably added the minced sausage at the last moment.
