
Hey y’all! I’ve only been canning for a couple months now, but I’m trying to be super cautious. I thought it would be fun to make cranberry sauce for the holidays, so I followed the Ball recipe for water bath canning and made half a dozen jars. My canner is small, so I processed 4 jars, then 2 more. The first 4 look like the ones on the left, which still have their headspace. For the second batch, they seem to have lost a lot of the headspace, and one looks to have a little sauce on the side of the jar. It’s the next day and the seals seem solid, but are the 2 that lost headspace safe to serve to my family over the holidays? Why was the second batch so different? Thanks for any help you can provide!
