[Homemade] “Godzilla” Sushi Roll

    # Godzilla Sushi Roll

    I was addicted to making sushi for a while. Took almost a year off from it, but I’m getting back into it again! The name “Godzilla Roll” is used by a lot of sushi joints but doesn’t refer to a common roll, it varies place to place. I hope this one lives up to the name!

    **Ingredients**

    * 1 full size sheet of nori, cut smaller if desired
    * ~3/4 cup prepared, seasoned sushi rice
    * 2 prepared shrimp tempura, tails removed if desired
    * 1/2 batch spicy crab salad (recipe included below)
    * 1/2 avocado, prepared as roll topping
    * chili crisp

    **Instructions**

    1. Cover the sheet of nori in a thin even layer of rice, filling all the way out to the edges.
    2. Flip the sheet of nori over so the rice is face down on a bamboo rolling mat that is wrapped in plastic.
    3. Arrange the fillings (shrimp tempura and spicy crab salad) in even lines, 1 inch from the edge along the longer side of the nori sheet.
    4. Carefully and tightly roll up the roll.
    5. Thinly slice the avocado and spread it out so it spans the entire length of the roll. Place the avocado on top of the roll.
    6. Place the plastic-wrapped rolling mat over the top of the roll and press the roll into a consistent shape.
    7. Place the roll on a cutting board and grab your sharpest knife. Optionally, cover the roll with plastic cling wrap to help it stay together as you slice. Run the knife under water for a second, then shake off any excess. Cut the roll into 8 equal pieces using a gentile sawing motion with the knife, running the knife under the water between every 2-3 cuts to prevent sticking.
    8. Plate the roll on your serving dish. Top each piece with a little bit of chili crisp.

    ***Spicy Crab Salad Recipe***

    **Ingredients**

    * 3 imitation crab sticks (krab sticks), 6 inches long each
    * 2 tbsp Japanese mayo
    * 2 tsp lemon juice, fresh or bottled
    * 1 1/2 tsp toasted sesame oil
    * 1 tbsp sriracha sauce, add more to taste if desired
    * 1 tsp soy sauce

    **Instructions**

    1. Combine the mayo, lemon juice, sesame oil, soy sauce, and sriracha in a small bowl and mix well.
    2. Roughly chop the crab stick into about ~1 cm chunks then shred using your hands or a fork.
    3. Combine the shredded crab stick and the sauce and mix until fully combined.
    4. Store in an airtight container the fridge until ready to use. Prepare one to two days before making sushi if desired.

    ^((Note – This crab salad recipe is lighter on the mayo and heavier on the other flavors (soy, lemon, sesame oil than many other crab salad recipes. Personally, I strongly prefer it this way. The only downside is that the sauce can be a little bit runny, but I think it’s worth it for the improved flavor. When using this in sushi rolls, try to leave excess sauce behind to avoid soaking the nori too much.)))

    Looks fantastic! I’ve never seen shrimp tempura like that before, I thought you had egg rolls in there at first. Also, I really need to get my hands on some chili crisp as it seems to be very popular and just sounds incredible.
