Baked Giant Beans, or Gigantes Plaki, is a recipe that I love and one I find super useful for vegan guests (though veggies and meat eaters love it just as much)!

Gigantes are a variety of Butter Bean, or Lima Bean, and these are pretty easy to come by if you can’t find Gigantes themselves. This is so good for you. The combination of beans and veg makes for a wholesome, really satisfying meal. Filled with both soluble and insoluble dietary fibre, protein, complex carbs and vitamins and minerals, this is a recipe that keeps you full for longer – and always puts a smile on my guests’ and family’s faces!
