– Chopped cucumber

– Toasted pine nuts
– Hummus (using original @sittoshummus)
– Juice of a lemon and salt/pepper to taste
Directions:
1. Preheat oven to 425. Add seasoned squash to parchment lined baking sheet. Roasting for 20 minutes, tossing halfway.
2. Make turmeric rice. Over medium heat sauté garlic and shallot until fragrant/soft. 3-5 min. Add in rinsed rice, water, and remainder of seasonings. Stir to combine and bring to boil. Cover rice and lower to simmer cooking for 15 min. Remove from heat and let sit covered for 10 min. Once done taste and season more to taste.
3. Now just combine all salad ingredients to your liking! Toss and taste. Season with lemon juice, salt and pepper until you reach flavor town.
