I cook chicken thighs all the time and the broiler w rack thing was an entirely new technique for me that turned out incredible results—like grilling over a flame, but in midwinter and with minimal mess and smoke. Really really impressive, this was a great meal and great recipe!

  10. I don't know what went wrong. But I did almost everything you said, it tasted terrible. I could taste the sumac very clearly, (which was a bad thing). Also can you please talk less and show more action.

  13. – marinate: 0.5 cup oil, salt, cumin, corriander, black pepper, turmeric, cinnamon, paprika, black pepper and red chilli flakes, grated garlic 0.3 cup lemon juice, mix with chicken

    – Sauce: yoghurt, mayo, 1 grated garlic glove, 2 tbsp fresh lemon juice

  14. It must be very tasty, but this is not an Arabic shawarma. Maybe a Greek version of it.
