Your risotto looks truly luscious! I have good luck using California Calrose rice which is local to me and cheaper than arborio.
I truly enjoy watching your videos. I struggle with "putting it all together", to make balanced plant based meals to meet my nutritional requirements. Your videos help me so much to do this. I look through all your videos for help with my own menu for the week. Your meals are balanced: greens, grains, beans, nuts/seeds. I always struggle with finding what to do with the big vegetables the cabbages, beets, ect. The way you eat is how I love to eat. It's all so colorful. I made this last night and it was so good! I did not have fresh tomatoes, so added some sun-dried tomatoes to my stock and that was a nice flavor element. I also made a parsley free version of your white bean fennel salad and the two dishes paired together beautifully.
