SPAGHETTI ROAST recipe *Submitted by Brandi*
3lb chuck roast
Minced garlic to liking
2 tbsp olive oil
14.5 oz can crushed tomatoes
1 cup Coke
1 lg sweet onion, sliced thick
1 small pkg baby carrots
1 packet Thick & Zesty Spaghetti Sauce mix by McCormick
1.5 tsp salt
1/2 tsp garlic powder

Slice chuck roast into 1 to 2 inch cubes, whichever you prefer best. Heat olive oil on Sear setting in multi cooker or on stove. Add garlic to your liking, add beef to sear and brown. Transfer to crockpot or change multi cooker setting to slow cooker. Add onion and carrots. Mix in large bowl the Coke, spaghetti mix, salt, and garlic. Pour over meat and onions in slow cooker. Set to low for 8 hours or high for 4 hours. I like to set it to high for an hour or two, then switch to low for 4-6 hours based on meat tenderness. Long and slow gives it more of a slow roasted flavor. Can also add extra sauce by adjusting liquids and seasoning accordingly. We like to double ours.

Serve over spaghetti noodles tossed in olive oil or over homemade mashed potatoes. Enjoy!!

  3. Mandy, I just wanted to tell you that I made the creamy bacon mushroom soup for supper tonight and it was DELICIOUS! I didn't have the Swiss cheese on hand, so I used Mozzarella and we both really enjoyed it! I'll definitely be making it again…and again…and again. My husband actually grows our mushrooms!

  4. I have noticed you shop at food Lion. We shop there too. Have you ever tried their garlic spread they have to make homemade garlic bread? It is delicious! They sell it near the fresh bread in the bakery.

  5. Made the Salisbury Steak, Feta Brussels and rice for dinner tonight. Wish I could share a picture! The Steaks were a big winner. The Brussels were good, but idk if I thought the feta was wow enough for the price, however we loved the balsamic glaze on them! Thanks for an easy meal tonight! (And quick clean up! That’s the big win!)

  8. Cook for two, but always make sure I have one or two extra servings for lunches. Some times I cannot make smaller (no matter what, I have portion issues. Momma taught me to have extra for unexpected diners) amounts and we get TWO dinners plus two lunches. Made Mexican rice, sausage, onion and peppers over acorn squash. Two very small squash fed each of us 1 1/2 halves for dinner and 1/2 for his lunch tomorrow. Hope everyone had a great Veterans Day. Thank you for your service.

  12. It's just me but for the life of me I can't cook for just 1. I cook my regular amounts then share with other single friends. We exchange food amongst 3 or 4 of us. That way everyone gets a variety and you don't eat leftovers until you're sick of them.

  14. Hi Mandy: in a recent video you made a chicken recipe where you pounded chicken breasts flat then smeared them with cream cheese and rolled them up. I know you mix something into the cream cheese. I made them once and they were excellent! Now I can’t find the recipe. Please help!!

  16. I made the spaghetti roast recipe tonight for dinner. OMG! That was absolutely the best roast! I left my roast whole because it was small. I added a yellow bell pepper because I needed to use it before it went bad. My husband doesn’t care for pasta (go figure) so I made rice instead. I will definitely be making this again. Thank you for sharing.

  19. Cooking for 2 mostly but our granddaughter moved in with us, so she is here too. She loves all these meals, just like we do, so takes the leftovers with her to work.

  20. I use half a pot of strong coffee when making pot roast in my cast iron Dutch oven…especially if I'm cooking deer!

  21. Mandy, You are my HERO! I tried this mushroom soup, so easy and SOOO GOOD! and tell Steven he was right the crusty bread with it was awesome. I have been watching you for a while but this is the first one I have actually tried. it was so good, I tried another receipt from a while ago (2 years ago, ground turkey and zucchini skillet) I am going to try EVERYTHING you recommend from now on!!! You are both the Best. Also tell Steven Thank you for serving out country. Oh and I am a single home. but have company often, so I would say 1.5.
