Frozen corn with the Mexican Street Corn Salad (Esquites) Recipe?
Anyone who has used frozen corn in this recipe…do still char it in a pan? Does it take longer? Any tips greatly appreciated

Yeah I do this regularly when it’s not corn season. It works just fine, just takes a little longer and is slightly worse than fresh. Just char it in a pan and you’re good to go.

I frequently make this for pot lucks and use two bags of thawed frozen corn, I also toss the corn in oil and roast it under a broiler on a sheet pan. It works well for scaling the recipe up.
