Moroccan Chicken And Potato Casserole | Comfort Food



I love my slow cooker, for the other things I can do while my dinner is cooking. This Moroccan Chicken and Potato Casserole is a healthy comfort food that can be served with rice, eaten by itself or had as a soup with some crusty bread rolls.

Sofrito
2 Onions finely chopped
1 carrot finely chopped
2 stalks of celery finely chopped
1 tbsp olive oil or neutral vegetable oil ( rice bran oil)

Moroccan Seasoning Batch
2 tbsp raw sugar
4 tsp paprika powder (not smoked)
4 tsp cumin seeds toasted and ground
2 tsp cinnamon
1/2 tsp ground cloves
1 tsp ground ginger

Slow Cooker additions
Add the sofrito
Add 2 tbsp Moroccan seasoning + 2 tbsp plain flour
Add 400 grams chicken cubed and fried (Thigh meat or leg meat only)
Add 400 mls chicken stock
Add 2 medium/large potatoes cubed
Add 1 can of chopped tomatoes
Cook on high for 2 hours
Add up to 2 more cups of frozen vegetables
Reduce to low and
Stir through 100 grams of sour cream or mozzarella cheese
Season with salt and pepper
