My family requested Beef Wellington for Thanksgiving and I’m trying to figure out how to double it. I don’t really have the space for a 4 pound tenderloin (I did see that post in here), so I’d like to do two, preferably roasting at the same time. Any tips or changes I should make? I made one a couple months ago and it was so amazing.
ETA: I’m cooking for about 16 people with tons of sides and \*maybe\* a small turkey or chicken. Hopefully it’s enough. 🤞🏻

I’ll tell you what I’d do: two Beef Wellingtons at the same time, man.
Hahaha I mean in my book beef wellington isn’t something you request, it is a gift lovingly bestowed by the cook when they feel like taking on a challenge. If my family (of 16!!) requested beef wellington on a day like Thanksgiving I would laugh them right out of my house.
The reason turkey (or roast beef or similar) is such a good thanksgiving main is it’s pretty much “set it and forget it” while you make 100000 sides.
Two Wellingtons *and* a turkey? 16 people! All adults? Remember that beef Wellington is a rich, hefty dish. Unlike turkey, people rarely go for third helpings. Whatever you do, DON’T knock yourself out making so many dishes that may or may not be needed. (BTDT) Yes, take pride and care with the dishes but you need to enjoy the day as well. Look at America’s Test Kitchen for do-ahead sides to take a load of your oven and yourself the day of. And a sliced Costco chicken should satisfy the pickiest of eaters (I won’t tell your guests you didn’t cook it). Set out a cheese platter before dinner to diffuse the ravenous among your guests and have bowls of good olives, pickles, and cranberry sauce to fill those little hunger holes during the meal. Make sure there is plenty of appropriate wine (pinot noir has yet to trigger a migraine for me). If serving mixed drinks, find an interesting batch recipe to make ahead so drinks are self-serve.
