I’ve been trying to find a balance between really satiating lunches that are also calorically dilute, and I think I finally figured it out. Also easy to meal prep! Here’s the general format:
– steamed potato as a base – lentils or beans (spices can change, but I like mine simmered in vegetable broth/turmeric/garlic powder/onion powder) – steamed veggies (whatever you have on hand! This photo had broccoli, zucchini, spinach and spring onions. Other times I use carrots, red cabbage, peppers, etc) – some kind of fat (a drizzle of tahini is really nice, avocado works well too!)
I feel genuinely good eating this and it lasts me for hours (which is saying a lot as I have a huge appetite). Just thought I’d share 😊
