I repurposed leftover Aji Verde sauce from the Peruvian Chicken Recipe into a pasta salad

The aji verde sauce is so flavorful, I added it straight up to the pasta, with no alterations.
Boiled pasta until just past al-dente (soft but not falling apart) in heavily salted water. I then used Kenji’s potato salad trick and dressed the noodles in white vinegar while they steamed off. I added some oil to keep them from sticking. Once cool, I added literally whatever chopped veggies I had on hand (this time radishes, cucumber, cherry tomatos) and the aji verde sauce.
Works unbelievably well. The Aji verde sauce is super bright and vegetal from the jalapenos and cilantro (in my case parsley), and so acidic, and the subtle heat works very well against the sour scream and mayo. It’s everything you’d want in a pasta salad dressing!
Happy to find a use as I find I always make too much of this stuff when doing a peruvian chicken and don’t end up eating it.
