Yes, they are edible starting from the very first, it is just your decision about when you want to pick them. Those look like they are round ones, so just let them get to whatever size you want. The flesh changes texture as they grow.

They are usually more nutty tasting and sweet when young so I definitely enjoy them more. Really good fried in some butter.

I’m up in 5b and I’m just going to say I would rather pick them young rather than let them grow or you won’t get as many and they’re delicious as heck when they’re small

Baby squash of all varieties is edible. I harvested a damaged baby spaghetti squash in the summer that made an incredibly smooth and flavorful mash. If you’re about to experience a freeze or frost, harvest anything of any size and enjoy it.
