My best friend came over this evening to can balsamic onion jam. It was her first experience with canning. She always told me she wanted to come over to help the next time I canned something so she could learn. This recipe was honestly perfect for teaching because the prep was only chopping onions and throwing the ingredients into a pot before anything “serious” started happening. I coached her on “finger-tip tight” on an empty jar and she nailed it first try. I verbally couched her for headspace, de-bubbling, vinegar, etc. I thought I may have to do most of the lids but she really understood and took to the “finger-tip tight” direction well. I let her do them all once I realized that. No siphoning and 100% seal. I am so proud of her!
