GREEK CHICKEN RECIPE (from @shesinherapron )
4 boneless, skinless chicken breasts
1 tbsp olive oil
1/4 cup Greek Vinaigrette dressing
1/4 cup chicken broth
1 onion, chopped
1 red bell pepper, seeded and sliced
1 tsp dried thyme
small can sliced black olives, drained
1/4 cup feta cheese

Season the chicken however you like. Heat oil in pan over medium-high heat. Add chicken and cook until browned on both sides. Add in Greek dressing and chicken broth. Blend and simmer for 3 minutes. Add onion, thyme, red pepper, olives and feta. Cook until veggies are tender and chicken is done. Serve over rice!

  1. I made this Sunday for dinner used powdered ranch & a little seasoning salt over the potatoes first cooked, then over the chicken when I added chicken.

  4. Love you and your family Mandy! I think I will have to try all of these. I was wondering why you recommended refrigerated queso rather than shelf stable for the crazy chicken. Does it make a difference?

  5. I don't usually comment, but tried this tonight. I couldn't find white queso, but found yellow queso. And the store was out of the saffron rice, but had the Vigo Roasted Chicken flavored rice. I don't know what the original tastes like yet, but the subbed ingredients still made an awesome mouth-watering dish. Will definitely play with this one. Thank you!

  7. Hi Mandy, just found your channel a short time ago and love everything we’ve tried so far! We made the Greek Chicken last night so good! I made a few modifications, doubled the sauce, when the chicken was done browning, I took it out and lightly sautéed the onions and red pepper. I then baked mine for half an hour instead of on the stove top, chicken melted in your mouth. My husband had an excellent suggestion for next time, going to cut up fingerling potatoes and add to the peppers and onions. Really enjoy your YouTube channel, thanks for all the great recipes!😊

  18. I made the Greek Chicken today for dinner. Oh my goodness! It was so delicious! I served it over rice with a side of steamed zucchini. My whole family loved it so much. I used 1/2 cup of the Greek dressing and 1/2 cup of chicken broth so there would be more sauce for the rice. Delicious! Make this recipe! Thanks Mandy. Love from Texas ❤

We have a family of 3 but I always cook extra because I work, and I don't always have time to cook.
