This is such a delicious and comforting soup! Doesn’t get much better than Corn Chowder.

Corn Chowder

Ingredients
4 slices of bacon, chopped and fried
1 tbsp butter
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
2 garlic cloves, minced
1/4 cup flour
4 cups chicken broth
3 pounds peeled and cubed Russet potatoes
3 cups frozen corn
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme

Instructions
In a large soup pot cook bacon pieces until crisp. Remove and set aside. Add butter and onions, celery, carrots, and garlic and cook until onions are translucent. Sprinkle in the flour. Then add the chicken broth stirring to incorporate the flour. Add potatoes, corn, heavy cream, dried thyme, salt, and pepper. Cook on medium low for 20 to 30 minutes until the potatoes are fork tender.
