Ingredients: ‘Cheese’ sauce: – 1/2 cup raw cashews (soaked in water overnight if you do not have high speed blender) – 1 tsp mustard powder and shiitake powder – 1/2 tsp onion powder and garlic powder – 1 tsp salt – 1 tbsp lemon juice (half a lemon) – 1 pitted green olive along with at least 2 tbsp olive brine (using and recommend gaea olives) – 1 roasted red bell pepper – 2 tbsp tapioca starch – 1 1/2 cup water

– Gf ramen noodles of choice (using lotus foods millet and brown rice ramen) – Kimchi of choice ( using cleveland classic kimchi which is my fav) – Couple drops of sesame oil (optional) – Nori furikake (using the Trader Joe’s brand)
Directions: 1. First prepare ‘cheese’ sauce. Set your oven to high broil. Put red bell pepper on cooking pan and blister on all sides turning every 3-5 minutes. You’ll just want to keep an eye on this as oven temperatures vary. Basically you want it blistered on each side! Remove from oven and place in a bowl covered for 10 min. Take out and remove outer blistered skin. Destem and deseed. 2. Add red bell pepper in a high speed blender along with all other ‘cheese’ ingredients except for the tapioca starch. Blend and taste. At this point you will add more olive brine and salt to taste until you reach flavor town. Did a couple pinches more of salt and a splash or so of brine. Once you enjoy the flavor add in tapioca starch to blend. 3. Add blended sauce to a saute pan over medium heat. Continue to stir until sauce thickens and is no longer liquidity like when you first started. Won’t take long! About 2-5 min. Remove from heat and set aside in container. 4. Bring a pan of salted water to a boil and add in your ramen noodles. Cook for 2 minutes. After 1 minute begin to gently separate noodles with a fork. Setting aside at least 1 cup of that pasta water. Drain. 5. Over same pan on medium to medium low heat add in kimchi to cook for about 30 seconds. Add back in noodles along with some of that cheese sauce. This is all to taste! Can always start with a smaller amount and add from there if you are feeling a little unsure. Just taste as you go! 6. Begin to stir to combine. It will feel a little difficult to stir so be brave haha. Add in pasta water to get everything nice and creamy helping to combine. We finish cooking the ramen at this stage so before taking it off the heat taste and make sure it is that yummy chewy texture. This only takes a few minutes! Adding more pasta water as needed to keep things juicy. 7. Season with a couple drops of sesame oil and combine! 8. Put in bowl and sprinkle some nori furikake on top!! Enjoy guys 🤩
Notes: – the quality of your ingredients make all the difference! For your kimchi ideally you want a brand that brings the tang. – Everything is to taste once you are assembling your ramen! Taste at all stages and just trust the process! Hard to go wrong with this one. – In the video that was for 2 servings

This looks good! I make my own furikake as too many have sneaky ingredients, pretty easy and I can adjust ratios.
