Do these tiny bubbles in my applesauce mean something’s wrong? Never noticed them before.
I’ve made applesauce a couple times before and never seen the amount of bubbles this batch has, almost looks like they’re carbonated. They’re all still sealed though. Normal or spoilage?

Probably. Those look like fermentation bubbles. That happened to my canned pumpkin. Be sure to be outside when you open that bad boy just in case it explodes. Mine did.

is this a repurposed pasta jar or a vintage jar?

If they are still/suspended that can be normal with thicker apple sauce. I get that from time to time. Usually when I open the jar and it loses vacuum and shake the jar a little they’ll settle out.
But if they looks like they are slowly rising or moving at all it could be starting to go bad but usually the top will pop up because fermentation and or bad stuff growing produces gas and cause jars to lose vacuum.
I also saw you used pasta sauce jars which is not recommended because the glass is different and thinner. I only use jars made specifically for home canning, better safe than sorry

These types of jars aren’t safe for canning if I recall correctly. They’re okay for storage, but they don’t seal correctly.
