Single guy Thanksgiving is a go. Turkey breast in one slow cooker. In the other are carrots and potatoes in a mix of Turkey gravy, chicken broth and seasonings. Both taking the low-eight hours.

The potatoes and and carrots can be done in 10-15 mins on the stove top (if you have one).

Good thought. Your timing is off though on the potatoes and carrots. They do not need 8 hours. But this is how we learn by trial and error. Gonna taste good regardless.

When I do Thanksgiving alone, I take the opportunity to make something other than turkey. I’ve never been the biggest turkey (or ham) fan. So instead, I go to a butcher and grab an amazing cut of steak, and give it a good sear.
I’ll still have other favorites like mashed potatoes and green bean casserole, but I just love getting to eat my favorite kind of meat rather than the “traditional” one. This year I’m having Thanksgiving with a friend’s family, and am honestly disappointed I’ll have turkey today instead of the amazing steak I had last year, lol.
