Cheesy Chicken, Broccoli, Cauliflower and Rice Casserole Recipe
Serves: 8
Casserole Filling
3 C shredded or chopped cooked chicken breast (I used a rotisserie chicken)
3 C whole grain rice, cooked
1 ½ C broccoli, cooked and chopped into bite sized pieces
1 ½ C cauliflower, cooked and chopped into bite sized pieces
2, 10.5-ounce cans cream of chicken soup, low sodium
1 C Sour cream
½ C milk
2 T Worcestershire sauce
½ tsp. garlic powder
½ tsp. kosher salt
½ tsp. ground black pepper
Breadcrumb Topping
1 ½ C Italian breadcrumbs
1 stick butter, melted
1 ½ tsp. dried Italian spice
Cheese Topping
2 C shredded cheese (I used a Mexican blend)
Preheat your oven to 350 degrees. Spray a 9 x 13-inch casserole dish with cooking spray (I used olive oil).
In a large mixing bowl, add all your casserole ingredients and mix (all ingredients up to the topping mixture).
Place the casserole mixture into your casserole dish. Now, add your cheese on top. Mix the breadcrumbs, melted butter and Italian spices together in a bowl and then top the casserole.
Bake 30-35 minutes uncovered. Enjoy!
