It took me some time to figure out how to cook zucchini – it can easily become mushy if overcooked, and bland if under seasoned. You’ll find a few tips and tricks for cooking this flavorful pasta recipe with this humble vegetable.
My Zucchini Pesto Pasta uses moderately high heat to cook the zucchini until al dente, but you can modify it to suit your preferences!
