I salted the chicken and put ot to air dry in the fridge overnight, not knowing eclxactly how I wanted to cook it today. Watched Kenjis video this morning and spatchcocked a chicken for the first time, cooked it over the vegetables. Made gravy with stock from the backbone similar to his. I can’t believe how quickly it cooked, going to dive in now!

I prefer chicken to Turkey.
Turkey tends to get dry quicker than chicken and tastes less flavorful and isn’t as juicy.
Looks good.
I’d probably try to go a bit browner. If your doneness is good, that means a bit higher temperature. Real close, though.
Vegetables look great.
