What do you think of my current setup and how can I improve it?

If it works for you and you like the coffee you get from it that’s what matters. To get really good improvements you’d need a significant investment mainly in a good grinder and accessories to go with it such as non-pressurized baskets for your portafilter, distributors, tampers and so on and I’m not sure how well the machine would handle those so without a significant investment in an espresso grinder and potentially a different machine, as well as a lot of learning and trial and error there’s not a ton to do. If you like the coffee you’re getting, what you have is fine.
