I made this last year, too. My FIL loved it so much he asked for it again.
I served it with two sauces: a hot jus with no dairy, and a cold mustard horseradish sauce (sour cream, mayo, horseradish, black pepper, Worcestershire, and a little pickled peperoncini brine).
Sides: Garlic mashed potatoes, sauteed mushrooms, spinach, and roasted carrots with ginger-honey-butter.
Except for the trimmings (because I always just trim and tie the roast myself) there was not a scrap of meat remaining. Perfect Thanksgiving meal!
