  11. The paste you put on the chicken would be called a pesto since it is a paste that is added during cooking. A marinade is a mixture that you place the meat in for an hour or more so that it permeates the meat for flavor. You can incorporate a marinade into a brine for added flavor prior to cooking. There is nothing wrong with your methog, but try it mixing the pesto into a brine. This simplifies the cook.
