Gluten-Free Tomato Basil Bruschetta:

1 Schar gluten-free baguette
2-3 Medium Stem Tomatoes (Seeds removed)
1/4 cup Sweet onion (finely diced)
1/4 cup Basil (leave some for garnish)
1-2 Tbsp Olive oil
Parmesan cheese to taste
Salt and pepper to taste

Cut bruschetta into 1/4 inch slices on a diagonal
Set oven to 350 degrees
Place slices on a baking sheet and toast in oven for 5 minutes.

In a bowl mix your finely diced tomatoes, onion, basil, olive oil, Salt and pepper.

Add a spoon of your tomatoes and onion to each slice of baguette and top with grated or shredded Parmesan cheese.

Bake for another 5-6 minutes until the cheese is melted and baguette is crispy.
